These were like soft, crispy little pillows on my tongue. They were enjoyed with a yummy Sriracha aioli sauce to dip them in, I can’t wait to make them again!
What You Need:
2 large sweet potatoes scrubbed and cut lengthwise
2 tbsp corn starch or corn flour
2 tbsp olive oil
2 tsp sweet paprika
2 tsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp red chili powder
Pinch of sea salt or himalayan salt and pepper.
1 garlic clove crushed
2 tbsp Non-fat Greek yogurt
2 tsp lemon juice
1/2-1tbsp Sriracha, depends on how hot you want it
S&P to taste
Blend or stir together
Start with turning the oven to 450. Place the wedges in a zip lock bag with the corn starch/flour and shake coating all of the wedges. Next, place the wedges in a large mixing bowl and add your oil and spices. Toss all of the wedges making sure each one has been coated with spices.Line all of the wedges on your baking sheet and place them in the oven for 15-20 min, check them with a fork and if they are just tender, then turn them over and place them back into the oven for another 5-10 min.
